What you will need:
4 oz (113 g) each crumbled feta cheese, shredded mozzarella cheese and shredded Cheddar cheese
2 tbsp (30 mL) chopped fresh parsley
2 unbaked (9 inch/23 cm) pie crusts
3 tbsp (45 mL) butter
1 onion, sliced
1 cup (250 mL) sliced mushrooms
10 oz (283 g) fresh spinach
8 eggs
1-1/2 cups (375 mL) 10% cream
Pinch Pepper

Steps to yummy goodness:
1 )In bowl, toss together feta cheese, mozzarella cheese, Cheddar cheese and parsley; divide between pie crusts.

2 )In saucepan, melt butter over medium-high heat; cook onion and mushrooms, stirring occasionally, until softened, about 5 minutes. Stir in spinach and cook until wilted, about 2 minutes; divide over cheese mixture.

3 )In bowl, whisk together eggs, cream and pepper; pour over filling. Bake in lower third of 375°F (190°C) oven until filling is set and knife inserted in center comes out clean, about 45 minutes.

4 )Let cool on rack for 10 minutes before serving.
