Vegan friendly Oreo cupcakes

 

What you will need ( for cupcake ):

1 cup soy milk
1t apple cider vinegar
3/4 cup granulated sugar
1/3 cup canola oil
1 1/2 t vanilla
1 cup flour
1/3 cup cocoa powder
3/4 t baking soda
1/2 t baking powder
1/4 t salt

Steps to yummy goodness:
Preheat oven to 350 (or convection at 325). Line muffin tin with paper cups.

Whisk together the soy milk and vinegar and set aside for a few minutes. Add the rest of the wet ingredients and beat til foamy. Mix all dry ingredients in a separate bowl and add to the wet mixture in two batches. Beat until smooth.

Fill muffin cups 3/4 full. Bake 18-20 minutes. Remove and cool. Frost with Vegan Oreo Cream Frosting, below.

What you will need (Oreo Cream Frosting) :

1/2 cup shortening ( vegetable )
1/2 cup margarine
3 1/2 cups sifted powdered sugar
1 1/2 t vanilla
1 package Oreos, crushed but not demolished…yes, regular Oreos are vegan! You can use the Paul Newman variety if you’d prefer.

Steps to yummy goodness:
Beat shortening and margarine together until well combined and fluffy. Add sugar and vanilla and beat about 8 more minutes. Add crushed Oreos and fold to combine.

Makes 12 cupcakes
can easily be doubled
